to watch them learn and grow...


I found this picture on the back of one of H's worksheets. I think it is exceptional for a 4 year old. Her favorite color is purple and she is really making progress on writing her name.

From the picture you can see, C is playing with cars and H is messing it up. I love to watch the kids, learn and progress.

Christian is 20 months

Oh how I love this little boy and this age! Our little C is looking more and more like a big boy. He is talking more and more, most of which is incoherent. He loves to copy what the kids not only do, but say. It is so obvious he is copying them, but you just can't quite make out the words. And he is growing quite fascinated with airplanes and motorcycles.






He decided his legs were his canvas. Thank goodness for washable markers!



I had left them room and after a couple minutes I wondered why he hadn't followed me, so I went to check and found him like this.



After a shower with me, I put his diaper on and he ran off as he heard the garbage truck. He didn't come back immediately, so I went to check on him and found him chillin' on the couch.

Enchilada Casserole

This is a delicious, easy, vegetarian recipe. Give it a try (even if you aren't vegetarian).

3 Tb diced green chiles
1/2 C salsa
1/4 C chopped green onion
1/4 C fresh cilantro
1 (15 oz) can black beans (rinsed and drained)
1 (11 0z) can corn with red and green peppers
1 (10 ox) can enchilada sause (I use green)
1 package corn muffin mix
1/2 C egg substitute
2 Tb chopped bottled roasted red bell pepper
1 and 1/2 C shredded cheese
sour cream
1 and 1/2 tsp chopped cilantro

put first 7 ingredients in slow cooker, stir, cover and cook for 4 hours on low
combine muffin mix, egg substitute and roasted bell pepper in a bowl, spoon batter over bean mixture, cover and cook for ~1 hour (I just make the corn bread per package directions)
sprinkle cheese over corn bread, cover and cook 5 minutes
top with sour cream and cilantro
