Enchilada Casserole

This is a delicious, easy, vegetarian recipe. Give it a try (even if you aren't vegetarian).

3 Tb diced green chiles
1/2 C salsa
1/4 C chopped green onion
1/4 C fresh cilantro
1 (15 oz) can black beans (rinsed and drained)
1 (11 0z) can corn with red and green peppers
1 (10 ox) can enchilada sause (I use green)
1 package corn muffin mix
1/2 C egg substitute
2 Tb chopped bottled roasted red bell pepper
1 and 1/2 C shredded cheese
sour cream
1 and 1/2 tsp chopped cilantro

put first 7 ingredients in slow cooker, stir, cover and cook for 4 hours on low
combine muffin mix, egg substitute and roasted bell pepper in a bowl, spoon batter over bean mixture, cover and cook for ~1 hour (I just make the corn bread per package directions)
sprinkle cheese over corn bread, cover and cook 5 minutes
top with sour cream and cilantro

Let me know what you think or if you have any questions!

Christian is 19 months!

Christian is growing in leaps and bounds! He is so absolutely adorable and fun. We moved him into Cameron's room to isolate Hannah, since she is our worst sleeper. So, now the boys are sharing a room and it is going pretty well. Little C is so sweet and caring. If one of the other kids is upset, he will go check on them, pat them, bring them a blanket etc. He adores his brother and sister and does EVERYTHING they do. He has started to run, so he will run right along behind them. He loves to try on shoes, particularly H's. And he loves to be out and about. Many times he will cry and refuse to get out of his seat when we get home. He can communicate very well and his fits communicate quite effectively that he is not happy and is quite obedient when asked to do something. He has a few words; hot, truck, duck, (probably only a mom can understand). He has a very sweet tooth, which he comes by honestly and gets very excited when I get out the mixer. We sure do love Christian!

First Day of School

Cameron started 1st grade this year.

Hannah is in her 2nd year of preschool. This year she will go 3 days a week.

Summer 2011

We had a fun, busy summer. The kids took an art class....

(I don't save most of the art, but I do photograph it)

Both H and C took swim lessons 4 days a week for most of the summer. They both made great progress and really enjoyed swimming. I had to bribe C to jump into the deep end, but once he did it, he loved it!

We took a mini stay-cation at the AZ Grand where we had a great time at the Oasis Water Park.

We also had lots of play dates, spent a lot of time at the gym, went to Peter Piper Pizza, Bounce U and camping of course.

Summer Backpacking '11

this is Chuck's backpack, weighing upwards of ~110 pounds

hiking into Silverton

The summer backpackers this year included: Chuck, Cameron, Hannah, Jonathan, Darien, Annie, Tim, Preston and Emmett. The adventure started in Durango, CO where they caught the Durango Silverton train. They got off the train at Elk Creek, where they continued to backpack for 7 days and 6 nights and somewhere between 24-28miles on the Elk Creek, Continental Divide and White Head trails. They hiked into Silverton and caught the train back to Durango. Chuck said: the kids were AMAZING, the weather was awesome, the trail was overly challenging, the scenery was unbelievable (his favorite place on earth), and no matter how hard they worked the kids on the trail, they still played like it was recess when they got to camp. Christian and I spent some quality time together. I got some quality sleep and was very productive.
